Hi! My name is Amy. I was diagnosed with Hidradenitis Suppurativa in January 2013. I am not an expert when it comes to Hidradenitis Suppurativa; however, I have found a way to put my HS in remission. I must stress this is what has worked for me and I understand each individual is different. My hope is to share my experiences with you to see if I can help you begin the healing process and put your HS in remission! Click on My Hidradenitis Suppurativa Story to learn more.

Black Bean Soup

The weather is officially starting to cool down.  I love this time of year!  With Fall comes the cool nights and my cravings for soup.  Here is a delicious black bean soup that is clean, healthy and an anti-inflammatory meal.

Ingredients
2 cans black beans, drained and rinsed
2 cups low sodium no-chicken broth
1 green bell pepper, chopped
1 red onion, chopped
1/2 cup scallions
1/2 cup celery, chopped
1/2 cup salsa (no sugar added), I use white bean and corn from Sprouts
1 garlic clove, minced
1 tbsp. onion powder
1 tbsp. garlic powder
1 tbsp. extra virgin olive oil
1 tsp. cumin
1/4 tsp. cayenne pepper
Juice from 1 lime
Garlic salt to taste

  • In a skillet, add olive oil, onion, scallions, garlic, celery, and green bell pepper.  Saute on medium-low until tender.
  • Meanwhile add black beans, no-chicken broth, salsa, and juice from lime to a pot and heat until it starts to boil.  Once boiling, turn heat down to low.  Add onion powder, garlic powder, cumin, cayenne pepper and garlic salt.  Add in onion mixture.
  • Let soup simmer for approximately 1 1/2 hours, stirring occasionally.
  • Enjoy!
